Bistro Broccoli Soup
Soup is such an easy, economical and digestible way to get your vitamins. This soup cooks up in less than 30 minutes with only a few key ingredients, and only has 3.5 grams of fat per serving. The nutritional yeast gives it that ‘cheesy’ flavour while adding extra protein and B-vitamins. Pretty well-rounded if you ask me…definitely a keeper!
Ingredients: (Makes 4 servings)
4 cups broccoli florets (I used fresh, frozen would work too)
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, diced
1 boullion cube
1/2 cup nutritional yeast
4 cups water
1 teaspoon pepper
Pinch of sea salt
Pink peppercorns (optional)
Method:
Saute onions and garlic in a medium soup pot over medium heat for 5 minutes. Crumble in the boullion cube and dissolve into the onion/garlic mixture, and then add the broccoli florets. Saute for another 10 minutes. Add 4 cups of water, nutritional yeast and pepper and cover, bringing soup to a boil. Reduce heat and simmer 10 minutes. Turn off the heat and with your hand blended, puree the soup until desired consistency is achieved (I like fairly smooth with a few chunks left). To serve, stir in a pinch of sea salt and ladle into a bowl or mug…How easy is that?
I am loving pink peppercorns right now, so I added a few at the end for a garnish. They add such beautiful colour and taste almost floral – so lovely!
