I am very proud of these muffins because they took me about a year of trying to get them just right. I am also proud because my son goes crazy for them. We usually eat them while listening to the song “The muffin man”. Ha ha. The quinoa makes them a great source of protein. The flax is a great source of omega 3 and 6. I love the recipe because it allows me to sneak a veggie into his diet. Let’s be honest…these muffins are great for me too, as I always need more veggies in my diet too! This recipe is also great with carrots to change things up.
