Cherry Caipirissima

This incredible summer sipper comes from my friend Wade, who spotted it in the NY Times, and thought I would like it. He was right, so right. Sweet cherries, sour lime, a gorgeous magenta hue…need I say more? We enjoyed these with homemade salsa and tropical veggie skewers on the bbq. It was a perfect summer afternoon. For those of us on the west coast, summer has (just now) arrived, and it is glorious. Soak it up while it’s here.

Ingredients for 1 drink:
3/4 ounce simple syrup (I used 1 cup raw cane sugar, 1 cup water, and 1 vanilla bean to infuse the syrup with vanilla flavour while it was on the stove.)
3 cherries, pitted and halved
Half a lime, cut into quarters
2 ounces white rum*
Method:
In a cocktail shaker, press and mix the simple syrup, cherries and lime quarters with a muddler or wooden spoon. Add the rum and 6 ice cubes. Shake hard and pour everything into a rocks glass.
*For a non-alcoholic version, omit rum, follow same procedure, and top with soda water, for a refreshing spritzer!
