Jessica’s Potato Salad

Jessica made something…and it was delicious! Creamy and tangy, with crunchy bits interspersed throughout – everything a potato salad should be.
Ingredients:
1lb red new potatoes
3 green onions, chopped
2 celery stalks, chopped
1 carrot, chopped
2 tablespoons olives, chopped
Dressing:
3 tablespoons rice vinegar
1 tablespoon fresh lemon juice
1 tablespoon dijon mustard
1/3 cup tahini
Salt & pepper to taste
Method:
Cut potatoes in half and boil for about 15 minutes or until just tender. Chop onions, celery, carrots and olives (a small chopper works great!). Mix dressing ingredients. When the potatoes are done, add vegetable and dressing and mix well.
