Mac & ‘Chreese’ with Bacony Bits and Frozen Peas

Ok, this isn’t really a recipe.  It’s just a few awesome vegan products thrown together to make an incredibly comforting, and kid-friendly meal.  Over the weekend we visited Karmavore Vegan Shop for our regular vegan haul, and to show a recently vegan friend, this little gem New Westminster has to offer.  We dined on veggie burgers, eggless sandwiches and peanut cups in the deli downstairs, and picked up some favourite vegan products to enjoy at home.

I bought:

A Celebration Roast , Road’s End Organics Dairy Free Mac & Chreese, and WayFare Pig Out bacony bits.  It’s so fun to walk into a store and know that everything is vegan, and have at ‘er!  A vegan needs a little junk food sometimes too…

Ingredients:

1 box Dairy Free Mac & Chreese

1/2 cup non-dairy milk

1/2 cup frozen peas

2 tablespoons vegan bacony bits

Assembly:

Cook Mac and Chreese according to instructions on the box.  When the noodles have just 1 minute left, add the frozen peas to the water.  Proceed with instructions.

Stir in most of the bacony bits, saving a few for a crunchy garnish on top, and serve! It reminded me of a vegan carbonara, on a budget…you might have to use your imagination a bit ;)
