One of the biggest hits of the Get Baked! holiday bake sale were Jessica’s ninjabread men, which she created from a veganized gingerbread recipe and some DIY ninja cookie cutters. Here are her instructions on how you can create your own stealth vegan variation of this favourite holiday treat.
Please note: The gingerbread dough must chill at least 4 hours in the fridge before baking.
DIY Ninja Cookie Cutters
For the ninja cookie cutters, you can purchase these ones online, or use the photo of them for inspiration to make your own, like I did. Once I had the design in mind, I looked up instructions on how to make your own cookie cutters. Here’s what you do:
1.) Purchase an aluminum lasagna pan.
2.) Cut the base of the pan into strips, about 1 inch thick. Be careful not to cut yourself on the sharp edges of the aluminum.
3.) Trace ninja shapes onto a piece of paper.
4.) Use the paper as a guide to shape the aluminum strips into ninjas.
5.) Staple the ends of the aluminum strips together. Voila!
Vegan Gingerbread Recipe
3 cups flour
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking soda
1/4 tsp ground nutmeg
1/4 tsp salt
3/4 cup Earth Balance vegan butter
3/4 unprocessed vegan brown sugar
1/2 cup molasses
substitute for 1 egg (use your favourite egg replacer or 1tbsp ground flax mixed with 3 tbsp water)
1 tsp vanilla extract
Mix flour, ginger, cinnamon, baking soda and salt in a large bowl. Beat Earth Balance and brown sugar together in a different large bowl until light at fluffy. Add molasses, egg substitute and vanilla and beat well. Gradually beat in flour mixture. Press dough into a thick, flat disk, wrap in plastic and refrigerate for at least 4 hours.
Preheat oven to 350F. Roll out dough into 1/4-inch thickness on a lightly floured surface. Use ninja cookie cutters to create your vegan gingerbread ninjas. Place 1 inch apart on an ungreased baking sheet. Bake 8 to 10 minutes or until edges are set and just begin to brown. Cool for 1 to 2 minutes and then transfer to wire racks to cool completely.
Decorate with Vegan Icing
Add a few drops of water at a time to vegan icing sugar and whisk until you reach your desired consistency (thicker is better for piping designs, thinner is better for solid icing). Add a dash of vanilla extract and mix well. Stuff icing into a ziplock back with a very small hole cut in the corner (or use a piping bag if you have one). Squeeze the icing onto the ninjas so it looks like they’re wearing traditional ninja garb, or a variation of it. I used the pictures in the ninjabread cookie cutter link above for inspiration. Enjoy!
