Super-Powered Sesame Kale Salad

Just over a week ago, Jen competed in the Western Canadian Hatha Yoga Asana Championships in Vancouver. This is the super-powered kale salad recipe she ate the night before that led to her placing third! She wanted (and needed) something raw and alkalizing that would give her energy, while also being comforting and delicious:
“Normally one would not think of kale as comfort food, but this salad is a different type of awesome. It’s not really the kale that makes it so delicious (sorry kale), it’s the dressing, and the way the kale is ‘massaged’, which makes it soft and salty, and doesn’t leave you feeling like an hungry rabbit after eating it. So, with no further ado, I bring you the Super-Powered Sesame Kale Salad!”
Ingredients for Salad:
1 bunch of kale
drizzle of organic olive oil
sprinkling of about ½ tsp of high quality sea salt
1 tbsp sesame seeds (to garnish)
about 10 cherry tomatoes
Ingredients for Dressing:
2 tbsp raw tahini
2 tbsp almond butter
1 tsp sesame oil
1 tbsp tamari
½ clove minced garlic
dash cayenne pepper
½ ‘nub’ fresh ginger
2 tbsp agave nector
Method:
Wash kale and rip into small pieces, add sea salt and olive oil. Massage the kale until it brightens and becomes soft, about two minutes. Blend all dressing ingredients until they are smooth and creamy. Top salad with dressing, tomatoes and sesame seeds, and enjoy immediately….it gets soggy if you wait!
