Vegan Hamburger Soup

I got inspired to make a vegan version of hamburger soup by my friend Katherine who shared this recipe from allrecipes.com on her Facebook page.  It sounded delicious and easy to make – she has two young children and they liked it too!  So with a couple packages of veggie ground leftover from an event, this was the perfect one pot meal!

Ingredients:

2 tablespoons grapeseed oil

1 chopped onion

1 cup chopped celery

1 cup chopped carrot

3 garlic cloves, minced

2 packages ground veggie round

1 teaspoon smoked paprika

2 teaspoons tamari

1 bay leaf

3 cups low sodium vegetable broth

1 28 ounce can whole tomatoes

1/2 teaspoon black pepper

Fresh chopped parsley

Method:

In a large saucepan, cook the veggie ground, onions, carrots, celery, smoked paprika and garlic in grapeseed oil over medium heat until onions have some colour and vegetables are tender. Stir in broth, tomatoes (crush in your hand),  soy sauce and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes.  Season with black pepper and fresh chopped parsley.
